Lime Tree Pantry make
between 10,000 and 15,000 hand-made fruit and savoury pies every week.

Hand-Rolling is part of the process in producing
our 'melt-in-the-mouth' short-crust pastry.
Our recipe has stood testing and contains
very little moisture with no animal
fat (lard).
"We hand-roll the pastry for each individual pie
because we believe that we cannot achieve the same texture for our pastry
by using the machinery currently available".
